Good on ya, Ashley!
The next step is to change your workouts. Muscles get lazy (that sounds strange, but they really do) and if you get into a regular routine, they go 'ho-humm here we go again' and give you minimum effort. You may be lifting massive amounts of weights, but if your muscles are saying, 'been there, done that' nothing exciting is going to happen. you won't lose muscle, but you won't gain any, either.
What you need to do now is change your routines, vary the muscle groups you work with, give one group a rest for a couple of days while you focus on another group, then return to the first group.
Don't know if you are cross training or not, but that's always a help.
As for eating -- as long as you are eating a balanced diet, you should be okay. There is nothing you can eat that will put on muscle -- only working your muscles will increase their size -- but you have to provide adequate building blocks for that to happen, and if you have gained a stone and a half, you are obviously eating well.
Bottom line is, you don't need to do more workouts, just vary the workouts you are doing, keep eating well, throw in a little cross training and you'll be a real hunk in no time at all.
Just had a look at your Earthrace boat while it was visiting. Awesome!!!!
